Being reasonably closeish to Cancale I've always been quite interested in seafood though not particularly brave. Snails are of NO interest, done that - yack. Mussels - oh yes Oysters - did one once on the wall at Cancale and was almost ick! Undeterred today I bought 4 (yes only 4 ) oysters and made oysters 'kilpatrick' - a cooked dish, not yakky raw. WHOW Well impressed! Even if you don't think you like oysters but you do like to experiment please do try this if you fancy it: Get some bacon bits and fry in their own oil (dabbing with kit towel if needed to get rid of any excess) and brown the bacon bits, set aside. Heat up your grill. Now for the Oysters Open them up (thats not an easy job) Split to halves and put the squiggly stuff in one half of the shell Wash well in case of bits of shell Dob some butter on each in the half shell Splat some Worcestershire Sauce on each Bung the bacon bits on top Under the grill for 2 minutes, sprinkle with parsley (if you have any) Bobs yer uncle. Wish I'd bought 40 not 4 now

Altho the trick is (especially if you're cooking them) put them in the microwave, just for a few seconds and the oyster shell is much easier to part Good tip Did consider the splitting of shells to be a man job tho, fli did that bit, but it lost me the end of my veggie knife as silly supermarket had no oyster knives for sale AT ALL on visit today. Ok, silly question, are these oysters actually still alive when bought? ?

Yes - and when you slip them raw down your throat - yummy (if you like the taste of the sea).

Mmmmmmmmmm lovely, Ianh - and we sprinkle a little red wine vinager with finely chopped shallot on before it slips gently down the throat. My friend who came to visit had never ever tried oysters before and she tried one, bless her - she is a game old bird! She didn't go for a second one, but she gave it a go.

Used to eat in a Thai restaurant in Manchester where they do them with rice wine vinegar, shallots, and finely sliced coriander, lemon-grass and chilli - mmm, can taste them now. Used to be a GBP6 buffet lunch - I used to get through about 2 dozen oysters for starters.

Have never tried oysters as I´m not a lover of those uggy bits in certain sea food,but will give them a go after reading your recipe Ali,sounds yummy.

I'd seen it done on TV a while back and lodged in memory to try it. Was amazed at the flavour! Even got a cuddle from fli that eve so something must've worked Only a cuddle? You know what they say about oysters.

Ok, silly question, are these oysters actually still alive when bought? ? Yes they sure are and if you find one with an open shell its dead so throw it away (don't eat it), they're only dead when you cut the "foot" away from shell and put the lemon juice on luvvverleee
