I do have rather a lot of fruit this year (thats aside from all the cider apples that my pig eats!) so I am wondering how best to store them for use over winter. Last year I peeled, chopped & froze loads of fruit, however there must be another method surely? I tried wrapping individually in paper in wooden trays but they still deteriorated & the pig got them anyway, so do you have any suggestions as to how I can store the fruit this year so Wilbur does'nt get it all? Also - three trees worth of coings. What on earth do I do with them all? Nobody likes confit de coing, I deposit tons onto my neighbours and of course Wilbur scoffs the rest. HELP!!!!!!!

We stew our apples & freeze in suitable sized portions. We poach our pears in syrup & keep in sealed jars until we need them. Have used them for either sweet or savoury tarts - yum!
As for quince - no idea sorry!

Best way for storing apples is cider and for pears - Perry cheers

Quince jam is delish!used to make lots in england-the kids loved it.Never seen any in france.

You can buy Confit de Coings here Tinkerbelle in the fancy jams section at the supermarket - you'll pay a hefty price for it too! Nobody likes it here so I guess my neighbours are going to have tons again this year and my pigs will stuff themselves silly!
Ideally yes I should cider & perry it Wibble but I don't have a press & I am certainly not paying the extorionate moeny demanded here for a small one in Espace Emeraud. And I'd be at it for weeks on end! Our small bit of the old commercial orchard didn't include the press you see because all the fruit was taken away to a big press some miles away to be processed.
