J'adore!
We used to have them at the Christmas market in Saint Suliac. They were so fresh, just "shown" to the pan of white wine and butter, and served in the big shells.
mmmmm heaven! I don't think the Waitrose ones would come anywhere close, but I might give them a try now I have the taste.

Have the ones from the fishcounter with the roe on they are the best from waitrose.(I used to work for them) I do a pasta dish with them as well.

Good idea, sabjac, will do. The ones in the plastic trays are always watery and cook like rubber.

I buy mine at freezer shop, as does Mickael's mother that way you know they are fresh and good. She only gets fresh from near where her sister lives this month.

In the uk I bought them from Waitrose,as i know they are fresh.Over here its Geant or Le clerk.

Aren't they a bit squishy after being frozen Em? If not then might consider same.

Well I defrost them and yes there is extra water, but no when cooked they are normal. I have even frozen fresh ones and defrosted later, no problems.
