It might be the tomatoes in it that wreck the taste for the fussy ones.
Boil the potatoes and cut into reasonable chunk sizes. Fry the bacon, onions and mushrooms - some spinach also goes in well. Mix together with some green pesto.

Thanks Judith - but they all actually love tomatoes!!!! It's the mushrooms they seem to be finicky about! And I've got no spinach or pesto....

Hi Kattie,
My carbonara recipe is very simple.
Put tagliatelle or pasta of choice on to boil. Dry fry ham or bacon in a frying pan, add cream (low fat does just fine for those on a diet!) & grated parmesan (we keep ours in the freezer), bubble gently for a bit, drain & add pasta - keep a bit of the water so if it is too dry you can add somink moist!!! Could do roasted veggies with it? Enjoy,
Mrs FG x

I've got one that has been passed down the family.
two packs of bacon, chopped one onion chopped mushrooms to taste, chopped fresh or canned tomatoes chopped and (but not essential) 1 can of tomato puree.
Fry the bacon, onions and mushrooms, add tomato's and tomato puree if used. Mix well.
Serve pasta with the bacon mixture spooned over the top and sprinkle with cheese (we use chedder).

bacon pasta with tomato sauce onion carrot grated tin tomatoes pinch origano pinch basil little black pepper little salt put all the above in a pan cook till onion is soft and then blend to make a smooth sauce. Fry off a pack of lardons in a pan add tomato sauce. At this stage you have 2 choices pour over pasta and serve, or put pasta shapes in oven dish pour over sauce mix well top with grated cheese melt cheese in oven, giving oven bake. If you have left overs reheat as oven bake

Funnily enough Rink - that was pretty much exactly what I did - but I chucked some yellow pepper in as well - and bizarrely - they all loved it!!!
