Can anyone give me ideas for using the million beetroot my neighbour has just given me......AGAIN!! The previous lots have been either steamed, peeled and eaten as salad or made into soup, but now I am looking for other ideas please?

Apparently beetroot is one of the best things for lowering blood pressure.

I had just finished making chutney and pickling the rest of my summer crop (cos Mr LK complained about beginning to LOOK like a beetroot, I was serving so much!) when this came on the TV with loads of lovely ideas www.bbc.co.uk/food/programmes/b017l4v7It's Antonio Carluccio with some delicious recipes LK PS, don't tell Mr LK, but the autumn crop is doing very well!

Muffins and brownies! Also pickle a load - just cook, cube, put in a clean jar and pour a load of vinegar over.
