Have you never tried elderberry in apple crumble ;D (my fave is apple, rhubarb and elderberry)? Or elderberry, redcurrant and apple jelly? Or elderberry and redcurrant cordial? The sky is the limit - it's a wonderful full flavoured fruit and is full of Vit C too so a lot of people make neat elderberry syrup to take every day during the winter as they swear it wards off colds! It's very strong on its own which is why I 'water' down the jelly and cordial with other fruit. Yesterday I spent the entire day harvesting fruit and veg and was sooooo knackered by the end of the day I could hardly stand - it's not just the harvesting, it's all the sorting, washing, storing, weighing, freezing you name it, and that's before any jam, sauce or chutney or whatever is made from anything! Having a quiet day cleaning today!

I used to make elderberry jam when I was broke with two small kids and use it only for jam tarts - the pastry seemed to sort of dilute the strong flavour

Mine's good in jam tarts too and so is bramble jelly - somehow find jellies do better - wierd how I hated jam tarts when I was a kid but I guess with shop bought jam it wasn't as good!
