Excellent Roz , I never thought to do the courgette cake in a loaf tin cos then it could be sliced cold like the French savoury cakes they serve with aperos (I guess). Now you need to try the ginger and beetroot muffins cos they are fantastic too. I love cakes made with veggies so will be doing a sweet courgette cake very soon.
