Just googled yesterday, this caught my eye so I made some as I happened to have all the ingredients to hand. Grated the beetroot and chopped up crystallised ginger (available from Belasie nr Rennes). Also makes more than 12 muffins (and silicone muffin cases aren't brilliant either - were better in paper cases!). They are the best cake I've ever eaten, and I've eaten a few. Looks like a yummy recipe MM,next time we go to the Chinese supermarket I ´ll get some of the crystalised ginger and try it,haven´t got any beetroot growing so good to know you can use cooked in this.

You don't want to start eating cakes like the Mad Moorhen BC, you'll end up all skin and bone like she is!

Not much chance of the skin and bone look,I try not to make too many cakes as I tend to eat them. ;D

They sound gorgeous! Trying hard to resist the temptation to make them..... OH will eat them all in one evening!!!! (And his waist line is expanding at a frightening rate at the moment!!!)

I try not to make too many cakes as I tend to eat them. ;D Me too, and I have to eat 3 or 4 for every one that the Term eats. It's such a shame. Actually I only make cakes occasionally otherwise I wouldn't STAY skin and bones, that's also a shame as I love cooking sweet things/trying out new cake/pud recipes yet find everyday savoury cooking i.e. dinner really boring.
