;D Ingredients Serves: This one serves 9 100g (4 oz) mayonnaise 75g (3 oz) mango chutney 1 teaspoon curry powder 1 dessertspoon lime zest 4 tablespoons fresh lime juice 1/2 teaspoon salt 500g (1 1/4 lb) skinless, boneless chicken breast fillets - cooked and diced Preparation method Prep:15 mins 1. In a large bowl, whisk together the mayonnaise, chutney, curry powder, lime zest, lime juice and salt. Add chicken and toss with the dressing until well coated. Cover and refrigerate until serving.

I might make that tonight as I cooked a chicken to have cold with salad for dinner. Do you wonder why it's called that? I just googled and apparently Florist Constance Spry and chef Rosemary Hume are credited with the invention of coronation chicken. Preparing the food for the banquet of the coronation of Queen Elizabeth II in 1953, Spry proposed the recipe of cold chicken, curry cream sauce and dressing that would later become known as coronation chicken.

Yes, I had wondered why it was called that - great Googling I also wondered why we had chicken again tonight We had cooked one extra 'just in case' on Sunday. Coronation Chicken is on the menu for us tonight, and chicken bone stew for black dog and brown dog ;D

I think it is chunks of green skinned apple - maybe they were getting their Waldorf salad and C. chicken confused.... ;D
