Basic recipe 3oz white sugar 3oz soft brown sugar ( but cassonade is ok) 3oz marg or butter 6oz sr flour ( cheap T55 + teaspoon baking powder works) 1 FREE RANGE hegg
Cream fat and sugars add beaten egg fold in flour + flavourings of your choice For this quantity, i use 100g dark choklit + zest of 1 orange, or 100g white choklit + zest 1 lemon. 2 0z flaked almonds and 2oz chopped cherries, or 4oz raisins + mixed spice. Really whatever takes your fancy!! I make the recipe up in large batches, and freeze it. It's easy to scoop out large teaspoon sized dollops to make a variety of mini cookies. put the little balls of dough spaced apart on a baking sheet, bake at about gas 6 for 12 mins; cool on tray for 1min , move to a cooling rack. Enjoy!!
