Rhubarb and cardamom fool
Amy Claridge - Coutrywise Kitchen ITV
Small tub of double cream 6 cardamom pods, toasted and crushed 4 rhubarb stalks, approx A little sugar (optional), Sweet Cecily flowers, to decorate Method
1. Add the cardamom to the cream, cover and leave overnight in the fridge to enfuse.
2. Gently stew the rhubarb in a little water until soft under tip of a knife (you can add a little sugar to this stage if you wish but I quite like the tartness).
3. Strain the cream (to remove seeds) and whip the cream until it has stiff peaks. Carefully fold into the cooled rhubarb.
4. Pop your Fool into pretty individual dishes letting the pink blush of rhubarb show itself off perfectly. To serve
The Fool benefits from a chill in the fridge for an hour. Decorate the top with edible flowers such as Sweet Cecily. Find a deckchair near some rhubarb crowns and enjoy your Fool in the summer sun!

Sounds nice (though not the rhubarb bit!) cos I love cardamom. My rhubarb is green though so it wouldn't look too appetising (and it's pretty dead anyway).... mmmmm this reminds me I have been waiting six months or so to make a sweet courgette cake with cardamom in it - was given the recipe back in the winter!

Both of the receps for this and the stiky ribs (not 4STIX's ribs tho) were on Countrywise Kitchen which I love watching (if can ever remember when it's on!) Do stiky ribs here from time to time so have most of the ingred above in stock Looked in SuperU today and they only had tiny weeny ribs with nothing on them, had been getting excited coz noticed they had started to sell 'racks'. But, am in process of making the rhubard fool at the mo, the cards have been in since last night, just picked some rhubarb (on it's second flush!) so here we go May take a photo if the cream works lol

Awwww bless Well the rhubarb is done and cooling off now Not sure about the French double cream equiv - thats the 'unknown' You love seeing pics dont you dink

Ha ha! ;D Your garden must be tons wetter than mine as mine disappeared beneath the ground way back in May sometime (goes into hibernation when it is dry) and sort of popped up a leaf here and there after copious watering and some rain in June. Now mostly gone again. It's a waste of time trying to grow it here, and I even went out and bought a new plant cos I wanted red stemmed not green stemmed rhubarb. I do have rhubarb in the freezer though but that's from Red Dragon's plant swap!
