My gussets drool over my raspberry jam!!! Here is my great great grandmama's Raspberry Vinegar recipe ( As promised to Ali a year ago. ) Soak 4 pints of raspberries in 2 pints of vinegar for 24 hours strain without pressing the fruit pour this liquor onto another 4 pints of berries, leave for a further 24 hours , then strain again. measure the juice, to each pint, allow 1 1/2 lb sugar. boil until no more scum rises ( remove the scum) leave for 1 day, then bottle. Keep in a cold place. Improves if you can keep it!!! I took some to a french friend's crepe evening, they went wild for it!! My lot use it as a cordial, or pour it neat over ice cream (moved from gardening thread)

That sounds bizarre! What kind of vinegar though? I couldn't make that as I'd need to use defrosted raspberries so I don't think that would work as so much juice comes out the frozen ones which are already half broken down.

I used malt vinegar in UK, cider is more readily available here, and works well.
