Em, I've got someone staying soon who is gluten intolerant. I already use quinoa quite a lot, and my baked chocolate mousse cake is gluten free. Ive thought of maccaroons (coconut and almond) and I've googled gluten-free cooking; but I was wondering if you have any tried and trusted recipes? My other gussets are all serious cake munchers, and I don't want her to feel left out. Any advice and tips much appreciated.

get them to bring some gluten free flour and baking .powder.I have a carrot cake recipe-excellent if you'd like it.Also made lemon meringue pie using gluten free biscs and melted butter as a base.E Leclerc sell rolls,madeleines pizza bases choc/shortbread biscs+pastas. You can use cornflour to thicken sauces.Most sausages are gluten free here.

hi tinks. would u post your carrot cake recipe please? I do a brill coconut and carrot, but always looking for more! I like the idea of the lemon meringue with G-free bix. this week's gussets coming up from Spain with loads of lovely unwaxed lemons.

Sorry, haven't got any cake recipes - but a story. My friend James has a gluten allergy, which wasn't diagnosed until he was in his late 30s. When he was a child, and often off school poorly, his mum used to tuck him up on the sofa with a plate of jam butties. Poor sod.

Hi I don't have a gluten allergy I am allergic to all cereals apart from sugar........So any thing I make is totally flour free. I can give you a chocolate cake that uses mais flour but with this you must check it is free of gluten as some flours are milled in places that mill wheat. I also have a chocolate cake that uses ground almonds, and a carrot cake the same. Mais flour can be used to make white sauce etc. depending on how sensitive your guest is oats maybe off the list and a lot of other cereals. You need to check how bad the allergy is. Em

yes, oats are banned too. This is going to be a tough week, cos at the same time another gusset has a nut allergy!!!! I'm going to have to be soo organised and label all the cake tins.

I wouldn't want to be cooking cakes in your house that week! You have a guest with nut allergy, so no nuts in kitchen or you could have a problem. I have seen a recipe for cake that is made from mash potato and I think polenta or mais flour. I will try find it for you safe for both of them. Some people that are allergic to nuts are not allergic to coconut so you could possibly make coconut pyramids which is coconut, sugar, and egg. You need to ask, some people are not allergic to all nuts. I am only allergic to pistachio nuts but can eat peanuts which most are allergic to, almonds, hazel nuts, ect.You would be able to use any ground nut in the recipe apart from coconut. Of course potatoes are very safe that week for all I suggest jackets, tartiflette, roasts, fish chips no batter, and loads of fresh fruit and merangs(I can't spell!!it's those things made of egg white and sugar that just burn in my oven!lol)

carrot cake 2 cups gluten- free flour (normal size teacup)sieved 1 cup each brown/castor sugar 2 teaspoons gluten free baking powder 1 teaspoon ground cinnamon 3 eggs 3 cups shredded carrot 1 cup cooking oil combine flour and all dry ingredients,Beat eggsAdd carrots and oil Add wet mix to dry ingredients.Mix thoroughly.Add more flour if mix is too runny(like water)Half fill loaf tin and cook at 180C for 50-60 mins. I split mix between 2 sandwich tins and bake for 30 mins.Make butter cream filling.All guests will enjoy this
