Made this for the first time t'other week & it's fab!
175g ready to eat dried prunes, roughly chopped 225g pitted dates, roughly chopped 110g raisins 110g currants 275g butter 1 x 397g tin condensed milk 275ml water 150g plain flour 150g wholemeal flour 3/4 tsp bicarb of soda 1 heaped tablespoon chunky marmalade 2 tbsps sieved marmalade to glaze 1 tbsp water pinch salt
Place all the fruit in a large saucepan, then add the butter, condensed milk & water & bring up to the boil stirring frequently to prevent mixture sticking.
Turn heat down & simmer for exactly 3 mins stirring now & then. Transfer to a large mixing bowl & let it cool for 3 mins.
While it's cooling weigh out flours & sift them into a bowl with the bicarb of soda & a pinch of salt. Pre-heat oven to gas 3, 325F (170C)
When fruit mix has cooled, stir in the flour mix using a large metal spoon then add the tbsp of chunky marmalade. Spoon into a prepared 20cm square cake tin, greased & the sides & base lined with parchment (silicone).. Cover cake with a double layer of silicone paper with a whole the size of a 2 euro coin in the centre. Bake for 2 - 2 1/4 hours.
After removing from oven let it cool in the tin for 10 mins before turning out onto a wire rack. When completely cold gently heat the sieved marmalade in a saucepan with the tbsp of water & brush over the cake until shiny.
