For 2
5-7 carrots, peeled, quartered, diced generous pinch of salt 2 lumps of sugar 25g of salted/unsalted butter
Place into suitable saucepan, barely cover with water, boit at highest setting until water has evaporated. Now toss repeatedly until carrots are caramelized. The last bit is like waiting for milk to boil - a split second of distraction, and you will have burnt offerings !!!!!
