Hi all i want to try making some,i'll use ready made shortcrust,i have some skirt (jupe) all the recipes i find advocate placing the meat and veg uncooked,how can this work,?seems strange not to cook the meat and veg first,any help or opinions gladly recieved, especially a foolproof recipe of their own,thank you.

Hallo my lovely, I use short crust, cook my pots, swede, carrots mince and onion first, not too much gravy then fill said pasties remember crimping has to be on the side otherwise its not true Cornish according my Cornish friends down the road. Hope this helps

Hi Bunty,lovely morning here,out shopping shortly wearing my poppy with pride,amazing how many French i have to explain it to.So moy lovely,Jethro gave me a recipe,but youm know heem a bit of a loya,i can't abide swede,or mangels of any sort,so i use tatties,carrot, onion and CHOP THE MEAT SMALL,and cook till tender,?sounds good to me,i shall certainly crimp on edge as can't to it on top,if youm gets my drift,i thankee kindly and will let youm know how got orn.Have a nice w/end.

Hi Happygirl as bunty said cook everything first . we cheat and use pastie molds put pastry in then filling close lid and its crimped shut. and if you have any bits of pastry left over you can use the small mould and fill it with jam etc. link below to the molds we use. www.gifi.fr/305975-gifibox-chaussons.html.

You can just use a plate to cut around and then pinch the edges together afterwards if you can't crimp. Cornish pasties NEVER have carrot in them, just potato, onion, skirt and turnip (which foreigners call swede!). Salt and pepper and a knob of butter for the gravy . I should know I'm a proper Cornish Maid!
