La Macreuse is good for a pot au feu.Can be bought as a joint or cubed as for boeuf bourguignon.

I love the cut which in the UK I think is called 'chine' ?? Its like a giant rib, bone on. It's expensive, but on promo from time to time.
I have really gone off using the cheapest cuts, they're mostly from ex-milking cows and even, well I find, after slow cooking for several hours never really seem to get tender.

La macreuse is good for pot au feu which is slow cooked in casserole with veg.If Ali means rib of beef, that is for roasting or grilling and is a prime cut. Attachment Deleted

Thats the one Tinks - rib. I've never slo cooked it (bit expensive for that eh). Yup I'd go for something like La macreuse too. Mmmmm might go get some Great pix x

i buy that cote for roasting,but what about Basse cote a griller ? much cheaper.maybe slow cooked,?i use bourguinon(sp)with lambs kidneys for pies and pasties.i wanted to cook beef like i cook lamb shanks and the occassional shoulder of lamb.
