They are so easy but its a rather tedious if not stinky job.
You'll need a couple of jars. Don't go too mad on big jars because the onions will be soggy by the time you've used them all, just use those big jam jars.
Peel, top 'n tail the onions and pack into the jars, then cover with water then add a level tbsp of salt. Screw on the lid, shake the jar gently to mix the salt and leave overnight.
Next day drain off the water and replace with vinaigre d'alcool to cover the onions. (Use the Brown stuff like malt vinegar 'cos its more authentic. Tip this into a saucepan, add whole peppercorns, a pinch of seasalt and a liberal splurge of chilli-dipping sauce depending on how lethal you like your onions then bring to the boil. Simmer for ten minutes then remove from heat and allow to cool.
When the spiced vinegar is cooled slide a couple of washed & dried bay leaves into the jars along with few peppercorns, pour over the cooled vinegar & divide the other peppercorns between the jars.
Voilà!
These are best left at least a week for the vinegar to absorb into the onions, but you'll know they are ready when the vinegar changes from a golden colour to a darker Brown.
I call 'em Satan's Shallots for reasons that will rapidly become apparent!

Kind of back on the original topic but my English second home neighbours (well neighbours at the top of the drive near my post box) arrived yesterday and brought me two tins of Lidl (UK) beans and sausages. Very thoughtful and I'll sacrifice a tin tomorrow night...
