I've branched out into baking and while my scones are fine I can't seem to get cakes or sponges to rise well.
Anyone used a French supermarket self raising flour which gives decent results?....The last cupcakes I made weren't too bad but I'd put a full teaspoon of baking powder in the mixture....and they still didn't rise a whole lot....

You need the flour that says " gateaux" on the front for cakes S/pete..........................

As Jamdan says Usually a packet made by Francine, coloured a mix of orange (packet not flour ) Sometimes using too much baking powder can have the opposite effect to a larger 'rise' Also, as soon as liquid hits the baking powder it starts to work so don't hang about getting your bits into the oven (Jamdans cakes are to die for )

Thanks both of you. I've used Francine on the buns and cake I have baking right now. I see what you mean about the baking powder and will keep an eye on how much I use in the future.
I'm usually quite quick about getting my bits in the oven, but just lately I think age is catching up with me and I have to take things a bit slower...

I use nettos own no 45 Gateux or self raising Farine gateux avec Poudre Levante.Always works well
