It looks like a bumper year for these. Elderflower fizz, wine and cordial. Who is making what? I think I'm going to have a go at sorbet, delicate and summery.

It's ready now, been dripping the last couple of hours through muslin. Just need to put it in marge tubs, label and freeze and we're done for the year. I follow Sophie Grigson's recipe but only used 50g citric acid cos that's the size of the packet from the UK. I don't think it matters if you are freezing the cordial if you don't use it, but if you bottle it then it is a preservative. uktv.co.uk/food/recipe/aid/516164

Did elderflower champagne last year and must admit it was good. Used lemons in that too.
Bottled it in plastic pop bottles and they ended up looking like Michelin Men, bottled a few into sparkling wine bottles, one blew up and showered the kitchen with glass and the other (which I still have from last year) is trying to escape by blowing off the wired down cork!
This year I'm going to reap the fruit and make berry wine as we only have two elder trees, one is a lovely black elder and the other a common green one.
