Baking with yeast is time consuming - yes. But brilliant if you have other things to do Today we were unloading a removal into storage, so, whilst we did that I made some croissant dough in the bread-maker (2hr40mins) with a view to making Pain au Raisins. Finished the unloading just in time for the b/maker to go ping and dough was done. Rolled out as you would do for croissants, in thirds with grated frozen butter in 3 times.......... rested etc etc...... and put thick custard on it.....

Then the raisins which I'd soaked in boiling water, brown sugar and cinnamon to plump them up.....

Then rolled the lot up and set aside in fridge for a while, then cut and laid out on a baking sheet to prove for a couple of hours in the warm whilst I went down t'gardin to do things (in the hail and rain) ..........

Came back from hail and rain after a couple of hours and lo n behold they'd massively increased in size (think I've put too many on the same baking sheet!)
In a hot oven for 6 or 8 minutes and here they are....
We'll let you know if they were any good in about 1.2 an hour or so ;D

PS: It sounded a lot of hassle, well it wasn't really. It was quite fun and the time was spread whilst doing other things. Will post the recipe if anyone wants it.

Just had one, and they look just like Pain au raisins but they taste better than any bought ones ive had. We can make French stuff better than the French ( notice the "we" bit)
