Freezing the plums ,and then pulling them apart while they were still nearly frozen worked fine.

Oh dear - more wine on the go Did some apple and rhubarb (50/50) wine in October, that stopped working a bit soon so I chucked a tad more yeast and sugar in it and it's bubbling away nicely and clearing well ! Started some 'Ginger wine' early in November and thats looking really good, bubbling away like a trooper. Also ...... now have 2 x 16L lidded buckets with chopped apples, water and yeast fermenting in them for a week as stage I ...... Apple wine Also ........ have set aside the spare downstairs bedroom as a fermentation room kept at a constant 21 C with an oil fired rad in (Pls dont tell fli) ;D ;D ;D So, currently, in the cave I have about 9 litres racked off but still in their demis from May. 9 Litres fermenting in the 'fermenting room' along side perhaps another 9 litres of apple......... errr 27 litres so far...... Hic First tastinghic of the hicapple wine has occurhicred. Vintage November 2011 (as above), racked off twice, bottled in April 12. Made this one with brown sugar - its a little sweet at first taste so maybe might reduce the sugar a tad for this years. Very drinkable though with an underlying hint of appleish. No idea what the alcho content is - not sure how to work my thingywotsit. Very chuffed - cost next to nothing to make, just some yeast and sugar and apples that would have gone to waste. I'm low on apples this year but neighbour isn't so will be asking him for some and doing this one again! (Page 122 - Apple Wine (1) 'First Steps in Winemaking' CJJ Berry SBN 0 900841 40 0)

Yesssssssssssssssssssssssssss Another success. Vintage 4th December 2011 (bottled June 12) Apple wine with white sugar from Mr Berry's recipe book. Not too sweet with an underlying light apple flavour - Fli has said that it is akin to a sweet white Bordeaux !

Following on from this - I have to share a recent email I sent to a friend who's off to the UK at the end of the month and is going to post a parcel to my dear old mother for me - after of course he jokingly threatened to eat all the chocolate inside and send her some wine instead......

Pix is it this one? you managed to bottle it before you made it Eh? Made in 11 bottled in 12 - I am confused. Have read the posts over n over and can't see how I've bottled before made. Must read again then No, this vintage is a different vintage than the one pictured above, a different batch of vintage. Hic.
