OO, just what I need! My neighbour has just given me a basket of huge courgettes, and we are all "ratatouille-ed" out, so I am going to try this straight away, thanks

Well, that was tasty!! Obviously (being me) I left out the bacon and put a red onion a a bit of garlic in. Loveeerrrrrly, thanks

Souinds yummy, MM. Will keep the recipe for next year when I plant my veg at the proper time. I usually grow Custard Courgettes (they are round, flat and creamy white), maybe just my imagination, but I think they have a better flavour.

Catwoman (and everyone else) it's equally good with chunked feta cheese too. If I was missing out the bacon I would just do double the onion for the extra flavour.

Made it today, Madame Moorhen, was delicious - served it with haricot vert cooked the french way with garlic and parsley - cos we're a bit 'saladed out' here! Thanks so much for recipe

Remember my asking some while ago, Madame M, whether you'd ever frozen one? Well we did and I got some out yesterday cos we fancied a snack. I'd cut it into slices before freezing it so I just losened a few slices and let them thaw out slowly. Once they were at room temperature we tried some and it was just as delicious as when we made it last September. Roll on the courgette season - and thanks again for the recipe
