We had a belated birthday tea yesterday for our son and invited two neighbours round to share a typical english birthday tea. I made that cake from the Daily Mail - called William's cake based on his second wedding cake and it was delish especially with extra fudge icing on the top. (This was a refrigerator cake and consisted of broken Sprits biscuits,broken meringues,pistachio and walnuts,glacé cherries and some dried pineapple pieces all bound together with golden syrup,butter and melted chocolate)

Didn't fancy plain biscuits either so used those buttery spritz ones with the holes in the centre or you could use digestives. I crushed up about 9 of those meringue halves you buy in Super U that are pink and white and the colours along with the green pistachios look good. Don't buy salted pistachios though and try and get as much of the skin off as you can for the green to shine through.

I just happened to buy some pistachios in England cos they are cheaper there and they are for baking so no skins or salt - also just happen to have glace cherries from a previous visit to England so probably out of date but who cares - could make meringue as plenty of eggs...... hmmmmm.........well not today anyway - need to make strawberry ice cream!!
